Yesterday, I shared the Ozark Apple Cake with you. The original recipe called for pouring a caramel sauce over the cake. As usual, I didn't have all the ingredients for any of the caramel sauce recipes I researched, nor did I have the time or inclination to run to the store to get them. Wracking my brain for something else to go on the cake, I remembered this recipe for Lee's Caramel Frosting.

Lee was my mother-in-law and she was an amazing cook. I'm sad that I didn't take more time recording the recipes she knew by heart before she passed away five years ago. This was one of the recipes I was fortunate enough to have written down.

Here's what you need:
butter, brown sugar, milk, and powdered sugar
Here's how you make it:
Put butter and brown sugar in saucepan.
Bring to a boil and cook for 2 minutes.
Stir in milk and bring to a boil again.
Cool for 10 minutes. Add 2 cups powdered sugar and beat with mixer until smooth and dreamy, I mean creamy.
The result is something just short of heaven. You will love this frosting...clearly it loves you already. See the heart swirled into it? That's for you, my friend. (I promise I didn't swirl this with my finger.)

Pour the frosting on cake and spread around. Lick your spatula when no one is looking. ;-)
Lee's Caramel Frosting
1 stick butter
1 cup brown sugar
1/4 cup milk
2 cups powdered sugar
Melt butter and brown sugar together. Boil for two minutes. Carefully stir in the milk. Bring to a boil again. Remove from burner and cool for 10 minutes. Add the powdered sugar and beat with mixer.
This frosting is my father-in-law's favorite, especially if it's spread on a yellow or white cake. It's the cake he requests for his birthday every year. I'm glad I tried the frosting on the Ozark Apple Cake. For such a basic recipe, it takes this delicious cake to a whole new level of decadence. Enjoy!
P.S. For those of you who guessed Sleepless in Seattle for the movie title yesterday, you were absolutely right. The line was delivered by the main character, Sam Baldwin, when he was describing his late wife to their son who was starting to forget his mother. Such a sweet moment in one of my favorite movies.

OMG I make the same icing, however I add 1 teas. pure vanilla to it...Never had it on apple cake, I bet it would be great....I usually use it with a chocolate cake.
