
Here's what you need: butter, sugar, pumpkin puree, vanilla, pumpkin pie spice, cinnamon, baking powder, baking soda, salt, flour, butterscotch chips

Here's how you make them:
Start by creaming the butter and sugar together in a mixing bowl.

Add in the pumpkin and vanilla, mixing to combine.

In separate bowl, sift together flour, baking soda, baking powder, salt, cinnamon and pumpkin pie spice.

Add the sifted ingredients to the pumpkin mixture, stirring to incorporate.

Stir in the butterscotch chips.

Drop by tablespoonful onto baking sheet sprayed with Pam or lined with a baking mat.

Press cookies with fork to flatten a bit, as the cookies do not spread during baking.

Bake for about 13 minutes in 350 degree oven. Remove from oven and let rest for 2 minutes before transferring to wire rack to cool completely.
Pumpkin Butterscotch Cookies
(makes about 3 dozen)1/2 cup butter

These Pumpkin Butterscotch Cookies were packed with the all the goodness of fall flavors. I was surprised and delighted with their texture and taste. While we love traditional pumpkin chocolate chip cookies like the ones I made here, these cookies will definitely be added to the fall cookie lineup.
