Here's what you need: Farfalle pasta, cooked chicken, spinach, tomato, pesto, Italian dressing, olive oil, and feta cheese
Here's how you make it: Cook your pasta and combine all ingredients. Put in refrigerator to chill. Salt and pepper to taste.
Bowtie Pasta Salad
(adapted from I Heart Naptime)
1 package farfalle or bowtie pasta
1 Tbsp. olive oil
3/4 cup basil pesto
1/4 cup Italian dressing
1 cup chopped chicken (grilled, canned or rotisserie)
2 cups spinach
1 pint cherry tomatoes ( I used a chopped roma tomato)
1/2 cup feta cheese
Salt and Pepper to taste
Cook pasta according to package. Drain and run cold water over it to stop the cooking process. Stir in 1 Tbsp. olive oil. In large serving bowl, combine the pesto, Italian dressing, chicken, spinach, and tomatoes. Gently fold in the pasta. Sprinkle in the feta cheese and stir to combine. Salt and pepper to taste. Cover and chill in refrigerator. To freshen up if it is dry, stir in another tablespoon of olive oil or Italian dressing.
The flavors in this pasta salad combined beautifully. This was absolutely delicious and I will definitely be making it again and again.
