Here's what you need to make these: Chocolate Cut Out Cookies, chocolate ice cream and chocolate sprinkles.
To make them, simply sandwich a scoop of softened ice cream between two cookies.
Scrape off any excess ice cream.
Dip the edges into chocolate sprinkles. Place on wax paper and freeze. (After they were frozen, I put mine in a ziplock bag to keep fresh.)
These were such a fun treat to make. Confession time...I didn't share. I ate both of these ice cream sandwiches ALL...BY...MYSELF. In my defense, my family had eaten almost all of the cookies. I had planned on making these to share, but there were only 4 cookies left. What's a girl to do? I ate one quickly, bagged the other one, and hid it in the freezer for later. They'll never know...unless you tell them or they read this post. But, we're friends, right? You wouldn't squeal on a friend, would you? I knew I could trust you ;-) May you get to indulge in a little guilty pleasure too this week!
