
Here's what you need: a good hearty bread, prepared pesto, fresh mozzarella cheese, jarred bruschetta and butter.
Begin by slicing up the fresh mozzarella cheese.
Spread pesto on one side of sandwich.
Spread bruschetta on the other side.
Place the mozzarella slices on the side with the bruschetta.
TJ's Pesto Bruschetta Panini
2 slices of hearty bread
fresh mozzarella cheese
basil pesto
jarred bruschetta
butter
Preheat grill pan or panini maker. Slice the mozzarella cheese and set aside. Take one slice of bread and spread with pesto. On the other slice, spread 1-2 Tbsp. bruschetta. Top this side with several slices of cheese. Place the bread with pesto on top of the other. Spread with butter and put into the grill pan, using a heavy skillet to press down on the sandwich. Cook until golden on the outside and melted on the inside.
Notice these ingredients are all from Trader Joe's, but I'm pretty sure you could find similar products in any grocery store. Don't let the "gourmet" ingredients fool you... this sandwich is kid-tested and approved. It is an easy meal solution for those cold winter nights when you don't feel like cooking up a big meal, but want the satisfaction of some comfort food. Enjoy!

ReplyDeleteNici,looking at your sandwiches I remember mine , with cheese and butter, baked in the oven for my daughter, who as a child was in need of additional intake of milk and cheese. So I had to bake them every day for a long time (maybe some years) and of course for her brother, these sandwiches so tasty and easy to make.
