I've gathered the ingredients for it, then someone would eat one key ingredient. So, I'd be forced to wait again until I remembered to pick up said ingredient from the store. Well, it finally happened...I had all the ingredients at the same time. I went for it. And you should too!
Here's what you need: buttery crackers (like Club), butter, milk, light brown sugar, white sugar, honey graham crackers, chocolate chips and peanut butter chips.
Here's how you make them: Line a 13 x 9 pan with foil, leaving extra on the ends for "handles". Then line the bottom with about 25-27 rectangular butter crackers. Set aside.
In a medium saucepan, melt 1/2 cup butter over medium-high heat. Add 1/2 cup milk.
Stir in 1 1/4 cups brown sugar and 1/4 cup white sugar. Bring to a simmer.
Meanwhile, take a 1 1/2 sleeves of graham crackers and crush them.
Gradually add in 2 cups finely crushed honey graham crackers. Simmer, stirring frequently for about 5 minutes.
Pour 1 cup of the mixture over the crackers and spread evenly.
Place another layer of crackers in the pan and spread with remaining sugar mixture. Top with another layer of crackers. Set aside.
In microwavable bowl, heat 1 1/4 cup chocolate chips and 1 cup of peanut butter for 1 minute and stir. Continue cooking in 30 second increments until melted and stirred smooth.
Pour over the top layer of crackers.
Spread evenly and refrigerate for at least 1 hour until set.
Carefully lift out of pan and place on a cutting board. Cut into 1x4 -inch bars with a serrated knife.
Crunchy Chocolate Peanut Stix
Approximately 81 rectangular butter crackers (like Club crackers)

Simmer, stirring frequently for 5 minutes. Pour 1 cup of the mixture over the layer of butter crackers and spread evenly. Place another layer of crackers in the pan and spread the remaining butter/crumb mixture over the crackers. End with another layer of crackers. In microwavable bowl, combine the chocolate chips and peanut butter chips. Cook on high for 1 minute and stir. Continue to cook in 30 second intervals until the chips can be stirred smooth. Pour over the top of the crackers and spread evenly. Refrigerate for at least 1 hour. Carefully lift out of the pan and place on cutting board, removing the foil. Cut into 1 x 4 inch bars with a serrated knife.
Your family is going to love these. Your friends will rave about them. I took them to a Super Bowl party and they were gobbled up before the Football-shaped Chocolate Cutout Cookies even had a chance to be noticed. I'm so glad I had the courage to try this fun recipe. Oh my goodness!!! These have to be amazing! I love anything that's kind of wafer like and chocolate-peanut butter chip combo...I NEED to make these! ;) Really though, I'm excited about this recipe and thanks for sharing. I've come over from Jam Hands.
